Ingredients:
Method: Place the cold coffee in a bowl and add 3 tablespoons of Amaretto, put to one side. In a separate bowl beat together 2 egg yolks and sugar until thick and pale. Add the cheese and beat until well mixed. Fold in the whipped cream gently with a metal spoon. In a separate bowl beat the egg whites until soft peaks form. Fold egg whites into the cream mixture quickly but gently keeping the volume. Cover the bottom of dish with sponge fingers dipping each sponge finger into the coffee/ liqueur mixture (shaking off excess) first. Spread cream mixture over sponge fingers and repeat process using up the sponge fingers and finishing with a cream layer. |
